Spicy Mango Salsa

Simple and quick to make, delicious to eat, this citrusy take on a mango salsa will make a great party appetizer at your barbecue, summer dinner party or accompaniment for Taco Tuesdays!


What's more,  with the addtion of the spicy zing of our Ginger Lime Pepper Jelly, these flavours are enough to make a Mango crazy ;)

GENNY GRAHAM-Spicy-Mango-Salsa-recipe

INGREDIENTS


2 whole ripe mangos 

¼ small red onion

¼ sweet red pepper 

2 tsp ginger lime pepper jelly

Juice of ½ a lime

1 ½ cups fresh chopped cilantro


METHOD


  1. Slice the mangos closely along the stone on both sides, score the flesh with a sharp knife into a small criss cross pattern. Use the skin side to pop the flesh up so it looks like a hedgehog. Slice the flesh of the mango in small slivers into a bowl to make finely chopped mango.
  2. Chop the red onion and sweet red pepper into small cubes all similar sizes as the mango.
  3. Mix together the ginger lime pepper jelly and the lime juice and toss together with the cilantro and all other ingredients until well combined.
  4. Chill for approximately an hour and serve with tortilla chips or top onto your favourite grill!
